November's Recipe: Oven Baked Omelet

Oven Baked Omelet

9" x 13" glass baking pan sprayed w/PAM 350 degrees - 45 minutes

1 c. salsa - spread in bottom of pan

Spread the following evenly over salsa:
2 c. shredded Monterey Jack cheese
2 c. shredded cheddar cheese
(or 4c. Mixed cheese)

Beat together, dump over cheese:
12 eggs
1 c. sour cream
1 c. cottage cheese
2 T. Chopped chives

Bake until golden brown and firm; let set for 5-10 minutes to set cheese.
Cut into 12 - 15 servings; recipe can be halved and cooked in 8" x 8" pan for
6 - 9 servings.
